This dish is good on so many levels. It could be an meal entree’ or a snack to have on hand in the fridge for the week. It is also a good dish to have on hand if you are having a few friends over. Prepare it in advance, set your counter or table and serve family style with some good cookies on a pretty pedestal platter along with a nice warm or cold beverage, depending on the season…Or even yet, a nice dish for your Super Bowl Watch Party Buffet. It’s your protein, your vegetables (when you add lots of cilantro and scallions) & your pasta. Again, make it in advance, letting the flavors all meld in the fridge and “Voila,” something simple, something good…Just what a Marvelous Monday should be…It’s a Great Day 🍽️
Ingredients
-3 Tablespoons Canola Oil
-3 Tablespoons Sesame Oil
-1 teaspoon dried red pepper flakes
-3 Tablespoons honey
-2 1/4 teaspoons low-sodium soy sauce
-8 ounces dry linguini, then cook the pasta
-1 cup fresh cilantro chopped (at least, I like lots of Cilantro so it feels a bit like a salad.
-1/4 cup finely chopped scallions
-1/4 cup honey roasted peanuts
-1 Tablespoon toasted Sesame seeds
-3/4 pound rotisserie chicken breast or any cooked grilled chicken breast, cut up in small pieces
Method
1. Have all ingredients out and ready to go. Pasta should be cooked drained and sitting in a large mixing bowl.
2. Heat oils and red pepper flakes over medium high heat for 1-2 minutes (WATCH IT, don’t let it burn), in a small sauce pan. Remove pan from heat.
Add honey and soy sauce and stir. Pour mixture over the linguini and stir. Let sit for a few hours or over night in the fridge.
3. After the noodles have marinated in the fridge, add chopped cilantro, scallions, peanuts, toasted sesame seeds and chicken pieces.
4. Dish can be served cold or at room temperature.
