Here you go! Once again, something simple, something good (& healthy). Pick up a spaghetti squash in the produce section. This could be a side dish, or a vegetarian entree’. Spaghetti Squash gets its name from the stringy fibers of the flesh that when scraped with a fork, come off in a spaghetti consistency.

Ingredients (2 servings)

     -1 spaghetti Squash, washed, cut lengthwise & de-seeded

     -4 ounces Feta cheese, crumbled

     -6 ounces mini/grape tomatoes

     -8 leaves fresh basil

     -Coarse salt & freshly ground black pepper


Method

     1.  Preheat oven to 375 degrees.

     2.  After preparing Spaghetti Squash, place each half on a       parchment lined baking sheet.  

     3.  Add tomatoes, crumbled feta cheese and thinly chopped basil leaves to the squash. Sprinkle salt & pepper atop.

      4.  Bake for 40-45 minutes.  

      5.  Let cool slightly.  Serve along side a nice salad or grilled chicken or fish.
