Here’s a healthy version of a popular dip, served with corn chips ( My new format is recipe first, story, notes afterwards)…

Get your ingredients out and ready to go…

Ingredients

     1 cup 2% cottage cheese

      1/3 cup shredded Tex-Mex shredded cheese

      1 teaspoon cumin

      1/2 teaspoon freshly grated black pepper

      1/2 teaspoon garlic powder

      1/2 teaspoon onion powder

      1/4 teaspoon red pepper flakes

      1/4 cup finely sliced scallions (green part only)

      1/4 cup finely chopped fresh cilantro

Method

      1.  Preheat oven to bake at 350 degrees.

       2.  Place cottage cheese in a blender add everything except cheese, scallions   and cilantro and blend.

       3.  Pour mixture into a baking dish and top with shredded cheese.

       4. Bake for 15 minutes. 

       5.  When you take out of the oven, before serving, top with scallions and    cilantro.

       6.  Serve with your favorite chips.

Eating healthy is easier than ever.  There are so many ‘DUPES’ for or favorite snack foods available.  Substituting Greek yogurt for sour cream, purred fruits for fats and oils in baked goods, agave for sugar and on and on.  Well, here you go on this one to substitute for a Mexicali Dip.  When you switch out the cottage cheese for sour cream or cream cheese, you’ll not only get less fat, but more protein.  I would tell my kids protein is your brain food and if you workout, eating adequate protein can help build muscle.  Sooooo, add these ingredients to your grocery list and get going.  You now have a health snack for you or your people for your next gathering and someone asks you to bring an appetizer.  Serve with your favorite corn chips, your favorite cold beverage, be it sweet tea or a spicy margarita and say hello to a …Great Day 🍽️
