It’s good to be on the outlook for dishes and appetizers that are both delicious and healthy.  I came across this dip and it caught my eye because of those two factors.  You start with an avocado which has many good nutrients, including a good fat.  Then add some protein with cottage cheese, some nice flavorful herb, sea salt and pepper and in a very short amount of time you have a nice compliment for vegetables, crackers or pita bread. A little lemon juice will give the dish some vitamin C, a nice punch of flavor and will keep your avocado from turning brown.  That’s it.  Since the color is green, serving along side celery and red peppers would make a nice festive accompaniment.  Chop a few herbs to garnish on top and you are done.  Anytime of the year, this would be a perfect lunch or snack on the go.  Just pack in a little plastic reusable container and celery or other veggies in  a container as well.  Enjoy!

It is absolutely THIS easy!

Ingredients

  1 avocado

    1 cup cottage cheese

    1/4 cup fresh chives

    1/4 cup fresh parsley

    1/4 cup fresh basil

    2 1/2 teaspoons minced garlic

   Juice of 1 lemon

   Salt and pepper to taste

Method

Place all ingredients either in the bowl of a food processor to process or in a bowl and use an immersion blender.  Blend. Place in a serving bowl with either fresh vegetable of choice, crackers or pita bread.
